Clarity Legal’s PDF2JPG is a simple, extremely fast utility that effectively extracts text from already searchable PDFs to Text format.
You can do this in Automator, but the process is complicated, and is missing several features that are needed in print production environments. Extracted text from multiple page pdf documents have a convenient separator so users can see where the page breaks were located in the original PDF document.
