Switching languages in System Settings in simulator itself didn't seem to work.

This is a known problem with the Xcode environment. You can change the language from the Edit Scheme. Once you activate the Edit Scheme, go to Options > Application language. This will affect the current run settings.

Apple's iOS 5.01 is available only when you're on Mac OS 10.8 or lower. You can install it from the Preferences -> Downloads > Components. If you're using Mac OS higher than 10.9 iOS 5.0 or 5.1, then it is not available anymore.
