iMKVmaker is an interesting DVD ripper for the Mac. It can convert your DVD movies to MKV files, and the interesting thing is that since MKV files can hold multiple audio and subtitle tracks, you can keep all the audio tracks from your DVD movie and save them to a single video file. When you open the MKV file in a capable video player, you will be able to select which audio track you want to listen to and which subtitle language you want to see. There are only a handful of converters that I have seen that do this.

The first thing you need to do is select the DVD drive. When you do that, a list of the available DVD titles will be populated. You can choose which audio tracks and subtitle languages you want to use by clicking on the small settings icon on the right side of each title. There, you will be able to check the ones that you want.

The trial version only lets you convert 5 minutes, but that is more than enough to see how well this app works. I have to say that I was surprised that this app worked so well. The final MKV file played great on VLC, with multiple subtitle tracks and audio tracks that I could switch quite easily. The conversion process was also very quick.
