Why am I being offered this update, when I already have Flash Player version 25 installed?

Flash Player works both as a plugin and as standalone. For Firefox, there's an NPAPI plugin, Opera and Chromium-based browsers use PPAPI plugins and the standalone edition has its own version. So, even if you updated the tool on Firefox, the standalone version might require a separate update.
However, there are also a number of websites that use Flash Player updates as a phishing scheme to get you to install malware on your PC. So, if you're sure that you have the latest Flash Player version for the application that you're currently using, then simply ignore the prompt.
I have downloaded the Flash Player for Mac version 10.5.8 without problems. However, when I go to install it the application 'quits unexpectedly'.
I haven't had problems with the the other update for Mac version 10.5.8 I installed. Any help as to why it's just not happening would be greatly appreciated! I am not very tech savvy at all.

The version on the website is not compatible with mac 10.5.8. The version supports versions of Mac OS X from 10.6 to 10.9. However, you have the possibility to download the correct version for your Mac using the archive page.
Access the website and then consult the available table. For your version of Mac, you will need Adobe Flash Player 11.x. The latest one is not supported. Download the correct archive, unpack it and access the folder then install the correct version for your computer/laptop.
